Gumbo. We have two Shrimp Gumbo recipes in the Callaway Cookbook. The Creole Recipe is p. 22. The Shrimp Gumbo is p 23. I combined the ingredients of the two recipes and cooked in Instant Pot. I used 1/2 of the ingredients. Sauté the Okra and Tomatoes, onions, peppers, celery in 2 Tablespoons of oil for 3 minutes. Add tomato sauce, water, rice, and other ingredients and cook on Rice setting. I added garlic-buttered, precooked shrimp at time of serving. Keep warm. Delicious! You’ll appreciate the creole flavor!!!
