Broccoli Soup p.5 is an easy one dish meal. I cut the recipe in half for the Instant Pot.  I Sautéed the onion, in the butter in an Instant Pot. I put in noodles,  broccoli. I added  3 cups of water, 3 bouillon cubes , salt, Garlic Powder and black pepper. I add I cup of milk. I omitted the cheese. I also added 1 can of cooked chicken  I cooked on Rice Setting. When it cooled, I served with cubed cheese. This is nutritious dish. Broccoli is high in Vitamin C. Noodles provide carbohydrates. Chicken provides protein. Try it! You will enjoy!

Apricot Nectar p 38 is an easy cake to make. It can be frozen and used when unexpected company comes. If using an Instant Pot , bake on Cake setting.

Taco Pie.p 13. If using Instant Pot, fry hamburger meat, onion, and peppers. On Sauté. Cancel. Add the next 6 ingredients. Stir well. Cook on Chili/ Bean setting  When done and cooled add cheese. Serve with chips.

The Strawberry Salad p 8 is a nice, cool dish for summer luncheons or a delicious dessert. I added a small container of Cool Whip

Callaway cooks use left over meats and vegetables to make stews. Roast p. 19 is an excellent dish if there are any left overs. Chop meat. If using Instant Pot Sauté meat in 2 T oil for 3 minutes. Cancel and add 4 cups of vegetables. Add 1 c catsup, 2 cups broth, 1 can tomatoes and 1 package stew mix. Stir well    Place lid and adjust steam vent. Cook on Stew setting. Keep warm until time to serve with crackers or corn bread p. 27. A great dish for gloomy days.

Using a basic Pound Cake recipe p 40 variations can be made. This one is using orange slice candy in the batter. If using an Instant Pot, place water in Pot  Place batter in a microwave bowl and lower onto rack.  Bake on cake setting. When done and cooled, remove from Pot and turn cake out onto a cake rack. May divide the recipe in half

Orange Alaskan Salad p 7. Mix all ingredients well. Chill. Garnish with  extra orange slices

Tomato and avocado salad p. 8 is a South African dish. If using an Instant Pot, cook boiled egg. May also cook shrimp or use pre -cooked shrimp. Hollow tomatoes.  Chop pulp. Par avocado and cube  Toss in lemon juice. Mix tomato, avocado, onion, chopped egg with salad dressing. Add shrimp and toss  Fill tomato cups. Garnish with nuts. Serve on a bed of lettuce with crackers.

Potato Soup is a staple in Callaway homes. It is often served to sick patients or on busy days. Butch’s Potato Soup p. 6 can be prepared in an Instant Pot. Sauté onions and celery on Sauté setting in butter. Add water and cubed potatoes and cook on Soup/broth setting. When cooked and cooled, Remove 1 cup potatoes and set aside. Use a hand-held blender and blend to desired consistency while potatoes in Pot. Add back cubed potatoes, bacon bits, salt, red pepper, and chives. Stir well and reheat on Sauté setting. Keep Warm. Serve with cornbread p. 27 or crackers  Delicious!
