This cookbook is a collection of family favorites foods from the extended Callaway Family.  Simple down home meals that are sure to please guests and family alike.

The book is hard cover for easy clean up. It has a spiral binding so it lays flat on the countertop while you are preparing a dish making it easy to keep you place and read the recipe.

Included between recipes are some old family pictures that are sure to bring back some memories.

Eggs, Eggs, Eggs

It is recommended that people eat at least one whole egg a week.  Eggs may be used in bread and other dishes throughout the week. Eggs are very nutritious.  They are high in protein, vitamins A, B, C, and minerals like iron and phosphorous. These nutrients are needed to rebuild cells and give us energy and good mental health.

Callaway cooks use eggs in the recipes of the Callaway Cookbook such as bread, p. 27, casseroles p. 9 and salads, p. 8. Proper cooking and cooling of eggs cooked in the shell prevent the green ring between the shell and the yolk.  The ring is caused by hydrogen in the white combining with the sulfur in the yolk.  Cooking in an instant pot on “egg setting” prevents the green ring.  Cool eggs in the shell quickly.  Let eggs come to room temperature before cooking.  Dishes with eggs should be refrigerated after  2 hours.

One of the favorite Callaway recipes is pickled eggs.     

Pickled EggsUse a wide mouth jar. Set jar in warm water to prevent the jar from breaking when hot brine added.  Pack eggs that have been cooked in the shell, cooled and peeled.  Pour brine over top and seal for 24 hours.   

Brine 1 1/4 c. white vinegar3/4 c. water1. teaspoon picking spice1 t. garlic powder or minced garlic1 t. onion powder or finely chopped onion Bring brine to a boil.  Pour over eggs. Happy cooking and eating of delicious eggs!

Blueberry Bread

Blueberry Bread.  Blueberries are very nutritious. They are extra delicious in blueberry bread. This award-winning recipe in the Callaway Cookbook p. 25 is from Poplarville, MS. Poplarville is the blueberry capital of MS. The secret ingredient is Parmesan cheese. The batter will make a loaf of bread or mini loaves. Store in airtight containers and give to shut-ins or as hostess gift  Great eat in’

Congealed Salad.

Congealed Salad. The lime jello will be a colorful salad on a holiday when people wear green and want to serve green foods like St Patrick’s Day. Place in a pretty bowl and serve with party crackers

Gumbo

Gumbo. We have two Shrimp Gumbo recipes in the Callaway Cookbook. The Creole Recipe is p. 22.  The Shrimp Gumbo is p 23. I combined the ingredients of the two recipes and cooked in Instant Pot. I used 1/2 of the ingredients. Sauté the Okra and Tomatoes, onions, peppers, celery in 2 Tablespoons of oil for 3 minutes. Add tomato sauce, water, rice, and other ingredients and cook on Rice setting. I added garlic-buttered, precooked shrimp at time of serving. Keep warm. Delicious!  You’ll appreciate the creole flavor!!!

Banana Pudding

There are 3 recipes for banana pudding p 35 and 36. I used the first one in p 35 with microwave. I whipped 2 whole eggs with a hand-held beater. I added cornstarch and sugar and 1/2 cup milk. Using hand-held beater I mixed until cornstarch and sugar mixed into eggs. Add remainder of milk and blend well. I microwave 4 minutes and stir. I microwave for 4 more minutes. I add margarine and beat until shiny. I cool for one hour. In a serving dish, I layer wafers and bananas with pudding. It is topped with whipped cream. Callaways always have their favored banana pudding at family reunions. We hope you enjoy!

Chicken RO-Tel Callaway Recipe

The  Chicken Ro-Tel recipe p 15 may be cooked as a Casserole in the oven. It can also be prepared in the Instant Pot. I used half of the recipe. Sauté tomatoes, cut up chicken, onions, mushrooms, and peppers for 5 minutes in margarine.  Add 1 cup of noodles and Worcester sauce. Cook on rice setting with high pressure  When done, keep warm until mealtime

Pork and Beans

Pork and Bean dish.  Pork and Beans p. 13 or 14 is a favorite recipe for game or practice night.  It is a high energy dish. Extra protein may be added with turkey, chicken, or beef frankfurters. Just bake or slow cook in a crock pot, or in Instant Pot. If cooking in Instant Pot, Sauté onions and peppers. Add other ingredients and cook on Bean/Chili setting. Keep warm until mealtime. The chef, as well as Friday night sports enthusiasts, will enjoy!

When people want comfort food, Chicken With Dumplings

If using an Instant Pot, cook chicken with 4 cups of water  Add two bullion cubes. Use stew setting. When cooked, remove chicken and chop. Make dumplings.  I added more flour to dumplings to form a ball shape. Drop into the broth. Sauté for 5 minutes. Remove dumplings and make gravy. Add chicken and dumplings. Set on keep warm until ready to serve. Relax with this comfort food recipe on page 22.

Survival Balls

These Survival Balls p 45 are highly nutritious. You can make them at home using your hands to shape about 1 tablespoon of dough. I used Raisin Bran cereal. I added a cup of dried cranberries that had been soaked about 3 minutes. Store in airtight containers. Take with you on camping trips, jeep rock climbing, and other outdoor events. You may take the ingredients with you while camping. Make at your convenience. You may store in your desk drawer and use as a power pick up snack. Quick, easy to make snack.

Toll House Cookies

The Toll House Cookies p. 46 makes a bar type cookie. Maybe dropped by teaspoon on a cookie sheet. I substituted M&Ms and omitted nuts. I cooked at 350 degrees for 15 minutes. The yield was 24 cookies  Delicious!
